The game has to be sometimes specially adapted for use like that, UT 2004 and Halo are easier to do this because they're old and need less system specs to run.
It's unlikely you will be able to do this with AVP 2 because the graphics cards in school computers wont be up to it.
I had the Halo Portable, C.S 1.6 Portable and UT portable on my USB drive too, i have empire earth too.
Games that dont have to make registry edits only the ones that can do this, thus why usually older games are the only ones that can, whilst newer ones not so much due to stupid DRM. Mostly due to you not having admin privaledges on the computer, to be able to make registry edits.
Also the game will be read from a USB while fast it will be bottlenecked, and AVP 2 is a more demanding game and wont be able to transfers everything so would run so slow anyways.
