Ubuntu is a good distro and a good replacement for Windows.
You can't run iTunes on Ubuntu as Apple have never made a version for Linux. You can use Rythm Box to load songs onto an Ipod in Ubuntu, the only condition is that your ipod must be formatted for PC not Mac.

Limewire runs natively on Linux so there is no problem there. Its actually written in Java so its fully portable between platforms.
There are several video converters out there, e.g. Avidemux, WinFF, iriverter
The Linux equivalent to Sliverlight, is Moonlight which is Silverlight compatible plugin. You will also need to install Mono which is the Linux equivalent to .NET Framerwork.

I don't like Brasero for a start I use K3b for burning cd's/dvd' which is more controllable you can do a test test burn first and it will tell you if it will burn correct or give you a fault if it won't
you can install K3b through the package manager though I must tell you I have never burned movies so don't come shouting at me if it don't work, all i'm saying is K3b is a better user interface than Brasero and you can see what is going on with K3b
good luck hope you get it right
