Mp3 is a compressed audio format
to create an mp3 you must start with an original uncompressed piece of audio, for example a CD track
to make the mp3, you use an mp3 encoder - this is a special piece of software that analyzes the sound and decides which frequencies and certain little bits of sound can be removed from the original without the listener noticing. Apparently humans are more sensitive to certain types of sound.
Throwing away this sound allows the mp3 to take up a much smaller amount of storage space - typically 3 - 8mb for a track.
The bitrate is a general indicator of the quality but not always.
The mp3 encoder is a mathematical algorithm,
the mp3 standard is fixed but anyone can write an algorithm to create them, and some people are better at it that others. Some encoders are better at deciding which sounds and frequencies can be thrown away without the listener noticing.
algorithms also require a alot of processing time. The more processor time that is devoted to the conversion, the higher the quality will be. But if people set their mp3 encoder to fast setting then the encoder algorithm will be less careful in its analysis and will make worse decisions about which sound to make redundant.
its generally agreed that the best mp3 enocder is the LAME encoder, which if you use the correct setting will produce higher quality sound than any other mp3 encoder at the same bitrate.

Songs can get altered as they get passed on. For instance if I had a 128kbps song I could easily use an audio converter and make it a 192kbps. The quality wouldn't be as good but the file size would increase
